Hello and welcome back to the Eternal Hoptimists,
Today we are taking another look at my favourite thing to come out of Northallerton since former Hull City captain Michael Dawson. Of course, I am referring to Bayonet Brewing, who so far have impressed myself and the rest of The Eternal Hoptimists team.
When we received our beers to review, I was very impressed with the range of styles from the brewery, and it was almost too difficult to choose my pairing. To compliment the excellent TIPA Final EX, I chose to accompany this a DDH Pale named One Pip Wonder (Simcoe) that comes in at a very sessionable 4.5% abv. Once again, I am very much looking forward to getting the beer in my glass.


1. Name : One Pip Wonder (Simcoe)
2. Brewery: Bayonet Brewing, Northallerton
3. Hops : Simcoe
4. Grain : Barley, Oats, Wheat & Kviek Yeast
5. Aroma : Nose of passion fruit, tangerine, light tropical fruits with a hint of berries.
6. Appearance : Pours a very hazy straw/light amber colour with a two finger fluffy white head.
7. Body : Medium body with a nice, soft, full mouthfeel
8. Taste : Whilst the Kviek yeast is evident is does not dominate. The Simcoe hop really shines in this giving off a juicy flavour profile with notes of citrus fruits, zesty orange, and passion fruit. A very pleasant array of flavours makes this an extremely easy drinking and refreshing beer that can be enjoyed at any time of the day.
Well, well, well……Bayonet Brewing has done it again. Without sounding like a broken record, they have brewed yet another quality beer with One Pip Wonder. This is a very well-balanced beer with the DDH Simcoe hopping working very well with the Kviek yeast to make a beer that is not only very drinkable but highly sessionable and is one that I could drink pint after pint of, and when I come across it again that is what I plan to do!
The beer looks superb in the glass and gives off an impression of a very high-quality beverage, and that is exactly what this is. When you look at the size of the brewery one cannot fail to be blown away with the high quality and variety of what they are producing at the minute. One Pip Wonder is just one example of their brewing skill and yet another beer to showcase just what they are capable of.
Another fine beer from Bayonet Brewing, keep your eyes open for any beers from this brewery, you will be seriously impressed!
